Rik, considering the fact that Israel is sooo small, you'll have no problem seeing it all- Israel is about 550KM long and 100KM wide....
Everything is in a driving distance, and not a long one - max 8hrs.
The busses here are really good and go from most places to most places, but they are not that cheap (in the city about 1$, Tel Aviv-> Eilat 10-15$ each way)
I had a friend visiting from Germany a couple of years ago and she managed to do the whole country in two weeks, but she had my car to use...
No worries about your hair or piercings or tatoos or anything. The most that'll happen is that you'll attract attention, but nothing more. Israel is quite westernized, so no need to worry.

if u see people riding on camels in the streets of Tel Aviv, or using fire on the streets to bake bread, or frying some beef don't be afraid.....we are still stuck in the 100BC.....
the right side of the road is for donkeys & horses, the left is for camels & elephants (yes we still use them)
LOL
just joking, Israel is middle-east-europe we have plenty of mixed cultures here, u will like to see them
