I think a good way to evaluate cheese versus non-cheese (at, least IMHO) is to notice the difference between these two songs:

Twisted System - Stark Raver
Psykovsky - Wishful Sinful

Yes, using anything from Star Wars in a Psytrance song is usually cheesy, Wishful Sinful (as I said, IMHO) pulls it off without being cheesy.

Cheesy is just using elements that are overplayed or over the top without too much feeling or depth behind it.

Its also similar to the difference between being emotional and being sentimental.

My recipe for cheese: using tired samples that everyone uses. Like Entropy did in one of their songs... I can't remember which one it was, but they had that sample in it: "I experienced pulsing and tingling sensations" ... well that one has been used time and time again. So that's cheese for me. Another recipe for some fine cheddar would be artists that just copy paste other artists and pretend to be great in their own way.
