Ure question is "a little bit" unspecific
Chill Out is an incredible wide genre.

U mean the "sitar". There are tons of trax with this instrument. A lot of traditional (mostly from north india). A very famous traditional artist is Ravi Chankar (maybe wrong spelling).
There are also lots of eletronical tunes involving this instrument. Maybe Prem Joshua would be good choice for u.
Then there are lots of more psychedelic chill out tunes. I don`t know, where to point u there. Lots of stuff. I am not very familar with such chill out tunes, but others can help u, I guess.

I just could imagine Hallucinogen Fractal Group, but they haven't done much trax, me thinks. You'll find some trax on this compilation: http://www.el-horto.hu/disco/disco-main/1997.Chill%20Out/

To be really creative and get a more tailored result. Buy some shankar records then layer them over some minimal dub beats. This way you can acheive the groove you've got in your head           Lobogistic labs
