Personally i do that. But you can be subtle about it to maintain balance.

Kick, Bass and snare is centered.
Open Hihat - 3points to the left
Closed hihats - 3points to the right.

- Play around with leads, to make them stand out. If you layer leads over another it can be effective to do this in order to clean up. One lead to the right, one to the left. maybe not a massive lot, but we're talking 14points to left and right.

- In complex stab sequences you really do want to have the sounds ping around to create some interesting grooves.

Sound wise, there is no "center" There are two speakers, left and right, and if both output the same signal, you'll perceive it as being in the center. But, if everything comes down the center, then it will be mainly duplicated on each stereo channel.. Not that it's a bad thing, but since every element in a mix must cooperate between each other, you'll definitely benefit from using stereo processing (like panning) in your mixes - just imagine one synth line on the left and another on the right, each will have a bit more space to play around with

Usually if your signal source is mono (so a single signal ), it's "easier" to handle panning in the mix, as you'll have more control - but if you don't do any stereo processing then everything will remain in mono (just a ping pong delay can do wonders in giving a sound a great stereo depth).. while if you have a stereo signal, just turning the pan knob doesn't necessarily mean that the sound will be placed where you put it - imagine the stereo instrument was recorded way to the left.. if your panning is "dead center", then no changes is done, and the sound will still come from the left


For drum sounds I like to imagine how the drum elements are positioned to the drummer.. so the center kick and close to center snare, some panning on the toms, lots of panning on the cymbals.. and, when desired, run away from this and experiment a lot on it for that "digital effect" (opposed to a natural acoustic effect).
Also, delay's are your friend and help you fatten the sound ("fat" is a horizontal space measure.. so you'll need horizontal space in your mix - panning ), so for instance hard pan you high hats to one side, and feed a small (like, 5 to 20ms) delay to the other side, to get you hat's to be very spacious

I would like to know what your views are on the following:

As you know many synths, having more than 1 voice, detuned, gets a stereo image. But it's uncontrolled stereo.

Would you rather make the sound mono and add stereo with effects - like delay, or reverb.

Or just pan the original stereo as it is.

yeah panning is a good thing , it creates a stereo with and you give that sound a place in the mix . if everything would stay in the center , then every sound have to travel the same space , and you want space for you kick and bass what is centered . so leads layered good example . also grap a stereo plugin ( with stereo information , and pan some sounds and see what happens . best way to learn
