I keep reading the advice to tune the kick to the fundamental, or the hats, or whatever percs you are using. Why?

for the same reason most people don't tend to use chords made up of two notes that are half step apart in their music (unless you are Dillinger Escape Plan, in which case, carry on). it creates dissonance. most kicks will have a prominent fundamental frequency. if that frequency is just a few Hz above or beyond the frequency of your fundamental frequency of your bassline, it won't sound too harmonious (or as harmonious as it can be).
it's really easy to get a feel for this. throw a kick into Battery or some other sampler. create a typical KBBB pattern. let's say in a key of G, so the fundamental for your bass is 49Hz. put a frequency analyzer on the kick channel and start tweaking the pitch of the sample. i bet when you pitch it so the fundamental is at 49 Hz, it'll sound pretty good. it'll sound pretty good in other places. but when the fundamental is 51Hz, for example, or somewhere close, but not exact, it won't sound as good. there are some ratios that work better than others, probably in a similar way intervals work for keys (minor 2nd sounds less harmonious than major 4th).
