I know this is something I overlook a lot of the time unless doing a snare/hat roll, so I was wanting to hear some ideas using velocity.
It's pretty subtle, but I like using Ableton's Velocity plugin and setting the range from something like 95-105 on some of my percussion to give it a bit more "real" feel.

most of the time i play in melodies with my midi keyboard multiple times and then keep those parts where timing/velocity sounds best (of course after tweaking the parameters). so most of my midi tracks have some velocity variation.
also keep in mind that a lot of synths allow velocity to control a wide variety of parameters. i have a patch that goes from a soft piano like sound to having a sharp metallic timbre based on velocity without changing filter cutoff at all. another one uses velocity to modulate lfo depth. |

lay out a set of straight 16th hi hats, then lower the velocity of some, so that they become almost inaudible and use this method to punch non 16th note rhythms into a 16th pattern.
