Using Stereo Image in Mixing

How do you use stereo image in mixing? Which plugins do you use and which of those do you consider most critical?
I think quite common situation is that you have mono signal and you would like to add stereo information into it? What techniques or plugins do you use for this..? Here are some that come to my mind:
- normal panning
- stereo or ping-pong delay with feedback
- stereo delay without feedback (delaying only one channel to change perceived direction of the sound)
- adding stereo chorus
- using EQ:s and filters to create different spectrum to L and R channel
- reverb
- mapping midi-values to panning positions.
Here are some plugins that I heard people recommending:
- Waves S1
- PSP Stereopack
- Crysonic Sindo
Any others? Tell also if the plugin is "anything possible, but slow to use" type of plugin, or "only most relevant functions possible, but fast and intuitive to use". For example Sindo seemed very interesting, but do you REALLY need all of those adjustments..?
I am also searching for a plugin like MIDI-gate, but where you use MIDI to set panning of the channel? If you have a synth melody, you cut copy-paste the melody pattern into another channel and use it to control the MIDI-autopanner so that different pitch notes are panned to different positions in the stereo field. Can you recommend any good plugins that do this (and maybe even more?). Maybe even randomization of panning every time a note-on message comes, in a predefined stereo subfield.
Then do you happen to know that is there any way to use separate Voxengo GlissEQ plugins for left and right channels in Ableton Live?,

Stereo widening is also an option. Only one slider usually.. so easy to use
Automation of panning can also be nice.
Most signals i use are stereo though.. Maybe only kick n bass are mono and dead center.
Can't you split a stereo channel in Ableton into two separate mono channels? Then you can insert two different eq's. Or bounce the track and pan the two tracks differently and insert eq again.
