in some softsynths, they can write the parameters LIVE, i mean you press Write and play with the faders/knobs. in THIS kinda plugz you can just know what midi parameter uses this knob you playing..
for example you wanna know whats the parameter of the cutoff of some synth.
you record (Write) while you playing the knob, after you stop, click on the part you recorded into it and press ctrl+g you can see now all the midi parameters that are changing in the part just read what parameter number or name and go it in the part, pick the parameter that you saw in the ctrl+g and do whaever you like  )

Really? Well they are different...
As far as I know, all Yamaha, Roland and Korg synths has basically the same midi controllers.

Actually there are few companies that make synths that do not follow the 'General Midi' patterns.. Such as Supernova for instance ( cutoff is 105 ) or the Waldorf XT that has couple of cutoff filters far from 74

and another way 
for example in pro52 , if you want to record the knobs changes live , in some cases you'll see it wont record , well you have to uncheck the sysex filtering option in cubase .
in the option panel , midi setup , filtering and uncheck the sysex option.
