You HAVE to end every song with the ii-V-I chord progression.

If you want to try some neat alternative scales, here are a couple raga scales (good for that "classic" Goa sound)

"Raga":
C D Eb F G Ab Bb

C Db Eb Gb G Ab Bb

Blues Scale (A few Shpongle tracks use scales similar to this):

C Eb F Gb G Bb C

Gypsy:

C Db E F G Ab Bb C

Those are all in C but of course you can transpose them by moving every note up or down an equal amount of steps (half-notes).

There are plenty more, or just make your own! A keyboard or piano has 12 keys in its octave (8 notes and 4 half-notes) so the ratio is 8/12 (or 3/4 if you reduce) to make a correct Western scale, so just pick any 8 of the 12 notes in the octave and you will always have a correct sounding scale as the remaining 4 will always sound "out of tune" when played in the middle of a pattern made from the rest.
