The main difference is 8 channels!

A synth with one stereo output (the Roland JP-8000 for example), will take up 2 channels on a mixer - then there are six channels left, on an 8-channel mixer, for synths/other audio-devices.

I have a Mackie 1202, which is a small 12-channel mixer, but it's more than enough for my needs.
