I use Kontakt. You can try the Kontakt manual for start. It's pretty easy to use software. If you have a bit of experience with samplers.           Everyone in the world is doing something without me

I use Kontakt 2 and RMIV, the latter one is limited but nifty and easy to use because you can flip through your sample-folder while your midi sequence plays: this way you can find the perfect sample that fits the rest of your sequence.

Logic EXS24, of course, The better fat filter on the soft synths/samplers I've already seen on the market (there was a light VST EXS24 version few years ago - I guess Apple doesn't sell it).
Kontakt has a lot of famous, really, but I've never put my hands on it.
Halion is very easy to use as well.
