Select the notes that you want to quantize. Then select and hold the q that is on the side of the matrix editor. That will bring you a list of quantization parameters. Select the one you need and you are sorted.

I'm guessing you're talking about tempo automation.
I don't have v5.5, but in v7 you'll have a couple of options.
1. goto the arrange window and select from view menu global tracks. then you'll see the tempo track. you can write tempo changes like you write automation.
2. from the main options menu select tempo -> tempo list editor. then you can add tempo changes in a list style.
