Mixing: Make sure that all levels and frequencies and stuff are ok during the mixdown of the audio file.
Mastering: Making little adjustments after you have the final audio file.
Or something like that I think.

producing - creating the alpha track in some form, general ideas etc. - sometimes it is ugly, but has great ideas/grooves, so u must remix it .. go on.
mixing - arranging/organizing the parts/tracks (adding/removing some fx)
sometimes adding samples/parts sometimes - removing some,
unneccessarily in the original order.
sometimes organizing the track (intro/buildup/break/outro) sometimes there's more than 1 "buildup-break" pairs.
mastering - making the soung of the created track to be of a good quality - EQ/Compression/Level adjustments, Panning Balance etc.
the target - to create sound that will be not a shame to play in a club/car/walkman etc.
as u can understand - it's not so easy to be good in all the 3 stages of production. so people use "divide and conquer" approach.
bom.
