1.I was just curious as to if there many people who just play their keyboards, record the audio and manipulate the audio, rather than record MIDI and play it back?
If so, why, and what are some of your methods.
2. I'm looking for some creative ways to hit record while I'm playing the keyboard...any suggestions.

random tip: if boosting EQ try using a wider bandwith to make it sound more natural, less resonance. try to only use narrow bandwith when cutting. (always subjective never 100%)

What i normally tend to do is.. if recording straight to audio... make sure its played in time.
Sometimes I just record straught to audio so I dont loose the idea and then program the same thing to MIDI to get it perfect.
The only downfall of just recording straight to audio is you can not quantize.

i think this is not such a good idea. what if you want to change the patch that was used? what if you want to change notes, transpose a part etc? i think the best way to record your synths is before mixdown.

use the highest/lowest note of your keyboard to trigger 'record' (use your sequencers controller capabilities, e.g. generic controller in cubase)
