My whole system is currently on Raid, which is silly and next time, just going to have MyDocuments of Windows on a separate hard-drive being Raid; so only important data is stored in multiple copies, whilst maintaining speed of the operating system on a single drive.

Forget RAID 1 for a music workstation.
Go for RAID 0 if you want performance and backup you project folder occasionally on a different HD.
And if you have 2 much money to spend, 2 SSD in raid 0 for your system and 2 big HD in RAID 0 for your projects and samples :=0
