what do you do with them?
it's fills to me best to keep it in the middle.

I find constantly in the in the middle rather boring. You can play with the panning and make a psychoacoustic effect and go back to centre sometimes .More fun to me-atleast when creating psytrance.

I do kinda the opposite of that.
Once I'm happy with my hats I clone them, then pan each one hard either side.
Creates the illusion of being centred and makes them louder without using gain.

Also you can use slight variations in the left or right copy of them for strange rhythmic changes.

And for the cool panning effect i just do it backwards From the outside in.

*edit*
I have a question though, how much do you use a cymbals section, and when?
Some songs I think need it the whole time while others its better to use them in places.

depends the tracks but i keep them not far from the center, it work better with the kick imo and there is lot of space in the middle at these frequencies in my mixs

Sometimes I do it also like this. There is a lot you can do with duplicated tracks. For example one superb clean and the other (eq'd) for different varitation and some in-edited plug ins.

i like to pan my open hh some percent to the right and the closed to the left or viseversa.. makes a wider spectrum and leaves more space to the other sounds in the middle.
or just fuck around with them. or just pan someones for some more effect, just plane HH's all the way makes it pretty flat.

It bugs me when the closed and hi hat are not panned at the same place because I always think of how a real hi-hat would be played. Also, I really don't like having the hat on the left channel; I do sometimes just to break my convention and because I know it wouldn't bother anyone else...but then I just flip the headphones around when I listen to it myself, haha.

You can pan.. or you can work yourself the samples!
Like this, for example:

You layer two similar sounds on the same sample, then you create another copy with reverse channels!
This creates "more movement"!

I'm not making any rules but I can't remember myself making a track where I panned open hihat, kick and bass other then in a break or for an effect.
