Yes write in MIDI and keep a audio track below that using the Nord outs as record inputs

No loss on time either as if you had/ could do a bounce it would have to be in realtime

I think you are misunderstanding. You can still do this all in MIDI. You do not have to play live. You can sequence in MIDI and monitor that through the audio track i.e. Nord Outs 1&2.

So you would basically write your hook exactly like you would do it with another instrument in MIDI.

first thing make sure all cables conected ok

nord - soundcard
---------------------------

midi out - midi in
midi in - midi out
audio out (1&2) - audio in

now next step - make it all work

first when you play live - can you hear a sound ? does your sequencer recognize it ?

if yes we are very close

now open midi track and send it to channel 1 - make sure the nord is also set on channel 1.

does it get the midi ? if yes its all done , make your pattern records to audio channel and thats it - once u know what u do its noting much more then bounce.

most sequencers have a sort of delay compensation. It's a bit of a pain to set up initially, but once you've gotten it handled, it's not that big of an issue... otherwise you can just manually adjust it after recording it to audio.           An Eagle may soar, but Weasels don't get sucked into jet engines.

R u referring to when you have done ur MIDI part and recorded the audio and it plays a little bit to early?

Or are u actually referring to when u r monitoring the audio when still using MIDI?

When monitoring audio when still using MIDI you should have no latency? it should only come in when recording as this is due to the PDC (plugin delay compensation) which your host uses for all your software VSTi etc. Best thing to do here is as Mubali says, just readjust it after recording? should sync perfectly after a few ms adjustments?
