you can midi learn in generic remote, im not in cubase 5 so i have no clue...
but for some vst it works with midi learn in generic remote, just press and twist the knob....
If im not remembering wrong that is..

you even got the quick controls..
or if your vst supports that, like the u-he stuff for example..you have to route a midi track to it and then your able to do it right in the plugin..
