Is there any way to record the notes I played in a pianoroll?? (with the velocities in Fruity or Reason)
or in any other software??

if i understand your question right - u want to record not the sounds, but the notes.
this is what MIDI is for.
simply open a new MIDI track, make sure the program u work with doesn't ignore velocity/pressure messages , and press Record button....
jam here ...
press Stop.
edit ....
