And as someone else said you can use both. Headphones mostly Id imagine, then check frequencies in the monitor, if it does mono  . Your OS probably has an option for that if nothing else.
Id imagine though if you tried using one monitor only it would skew your panning, but you could definitely use it to get ideas out, then you can work on stereo stuff when you get teh other one.
