EP = Extended Play.
Usually contains 4-5 tracks, what some ppl would call Mini Album
Single = 2~4 tracks. Usually the track with several remixes.
But the definitions may vary.

I find they are both rather interchangeable... usually a 12" release is a 'single' and the title would be the "Space Farts EP" for example.

A single would usually have 1 track on each side, size can vary from 7" to 10" to 12". the term single comes from Single song release.
EP's (Extended play) pan have up to 13 min. of music per side (at 45 rpm) and are 12".
LP's (Long Play) in the good old days had 45 min. of music on both sides combined @ 33 rpm. today since a standart CD is 74 minutes the LP needs 2 records to fit the CD.
