For live sets I reckon you can use either 16 or 24-bit, with appropriate dither of course.

In mastering, dither should be applied as the last process before you reduce bit-depth. As far as I'm aware, reducing bit-depth should only really be done intentionally as the very very final stage after all mastering has been done - it if's not the last process of mastering then don't truncate and don't dither!           Mastering - http://mastering.OOOD.net :: www.is.gd/mastering
