Have a look at the Indian sections under
http://www.roughguides.com/music/world.html
which should give you a good starting point for actual indian music (as opposed to artists who've been to Goa on their hols and added a few sitars to their tunes...)
BTW.. is it compulsory to mnetion shpongle on all postings to this forum.. sh*t... I just did it too!

Also there are some nice projects like Loop Guru, Tom Vedvick (my favorite composer), Dhol foundation, a hypnotic compilation Technicians of Space......
And if you would like to hear smth ethnic Ravi Shankar is the best one i think....

Anything by Talvin Singh, I also like the OK album a lot. Also check Nitin Singh.
Also look for Makyo releases in his own Dakini label.
For something special check Genetic Drugs- I know of two releases, but there might be more.
And there's of course the classical Indian music, which is a world with richness unfolded. I'll just mention here the amazing flute player Pandit Hari Prasad Chaurasia. Opening a chill out set out in nature with a 20 minutes piece by him is a very strong experience.
