First you check if the label accepts demos. If yes they will mention how they want them received(audio cd or mp3, upload or not etc.) and where.
You need to send the whole track(s) and in the best audio quality possible. Most labels want the tracks already mastered or in an audio quality level acceptable enough to be released since they don't pay for mastering.
Most labels ask for a period of 2-3 weeks until they get back to you. If not you can contact after that period of time. Also a lot of labels mention that they will contact you only if they find your tracks interesting.
In case they have interest on your track(s) they will say what happens. There a lot of possibilities depending on the label.
If you are situated to one country and you have to send demos to another, you just do it the usual way(by post), or the way the label wants. Nothing special here.
If you worry about your music being stolen or copied from the labels, i'd say that serious labels(no matter how big they are) don't bother on doing so. The risk is high and usually they receive so many demos, that they don't have the time to listen to all properly. And in any case they would find what they want from such a big number of demos.
In the end, the easiest way to protect yourself and your music is, before sending any demo, to mail an envelope with a cd of your tracks, registered to yourself. Then you keep safe the receipt you take from the post office and anything you take upon delivery. Then you store this envelope in a safe place(with the receipts) and never open it, unless someone steals your music after the date of course, you sent the envelope to yourself. In this case, your lawyer will know what to do if you decide to press legal charges.
It's always good to write in the bottom of the cover of your demo the usual but necessary phrase "All rights reserved and copyrighted 200x"
