Does anyone know how classical composers wrote their music? Did they hire an orchestral and use them like tracks in a sequencer experimenting with them? Or was everything was done by writting thing in sheet music? In the second case, how can anyone imagine 5 or more different instruments playing at the same time? You must be a genious to make music this way.

They were ultra genious, and there are a lot more of them

I think tones of imagination, experience, theory and prewiewes on some instrument, like organ - it can replace an orchestra.

P.S. they sure were not stupid

Beethoven wrote all his later material when he was stone deaf. Straight on to the page, without ever having heard it first.

Now that's genius.

With enough experience and ear training it's perfectly possible to write melodies down without hearing them first (except just inside your head, of course!) and the training composers go through is designed to let them orchestrate arrangements and make variations on existing material. A piano helps bigtime though!           Mastering - http://mastering.OOOD.net :: www.is.gd/mastering

and even more interesting is the experimental orchestra music that was done in the mid 20th century. Ppl were experimenting with sounds and emotions using just paper.           Crackling universes dive into their own neverending crackle...
