my favorite acrylic paint is Rembrant. it has the best texture and density. its also the most expensive one I think.
I don't like to mix that much water with paint cause I like the thick density look. but anyhow, there're no rules for that.. you can add few drops of water and you can add a lot. depends on your personal needs..
there're also no rules to how much color is needed to paint an entire canvas cause one can paint using just one layer without mixing much colors and another one can do it totally different..
I'll suggest you to get few basic rembrant colors (red, green, blue, yellow, black and white) and practice on mixing. .
