Combination of factors I think:
Firstly, the harmonics of the instrument - a piano and a guitar will have a wide spectral response... and notes will work differently in relation to other notes...
Secondly, the 'timelessness' of the sound... we know it's purpose, and it is ageless, unlike synthetic sound which are often trend based...
Lastly, the fact that a guitar is a real instrument, played live... and not generated by an oscillator with filters. Compare a synth guitar and a real guitar and you understand

Maybe its because you are regular that guitars, pianos and all kind of live instruments are the regular ones that used to learn and play music, they are the "default". In the far future people may feel the same when superduperXXvSTi will be the default systems to write music. You know what I mean?

hmmm... i think it comes to how the guitar is more expressive than a synth
see, when you play guitar there are do many varibles like how you pick where you pick, etc etc
those atributes can be simulated in a synth but the guitar has many more varibles
it has some randomness that in a synth is simulated but in the guitar is in the soul of it
also, the guitar is analogue, probably your synths are digital
anague synths also have a sense a randomness because its impossivel to tune 100% an analog oscilator and other factor like impedance, that changes over time, cumulative heat, etc, etc,
