I see those things on sale all the time on Craigslist for next to nothing...
As said above most are mono so it would need to be stereo to get any great sound out of them but if worked right you might be able to pull something out. I don't see what the problem with using mono pedals is. Just bounce one channel at a time?

yeah, you can always doubletrack just record one channel then the other.

pedals are great, and range from bargain basement fuzz (you can build your own for $20!) all the way up to Eventide (the delay and pitch factor pedals are lush, but around $800).

being able to patch them together differently is the key. a lot of analogue distortion units are very dependent on the frequency content of the source material - so filtering pre-distortion and filtering post-distortion give very different results.

some pedals are noisier than others, but it's not a huge concern - most of the time you'll lowpass anyway           http://www.myspace.com/aeonaeon

Would you get an awesome stereo spread if you used 2 mono pedals with slightly different settings back into a stereo bus?

Stereo sample/synth/whatever -> into 2 mono fx pedals -> back to stereo bus.

yeah... it depends on the sound of the circuits, but you would definitely get the stereo feel. don't expect super-wide-ness unless there is an element of delay though!           http://www.myspace.com/aeonaeon

expect some phase problem too, but it s analog just by bouncing with same setting it should not sound 100% identical.
a problem with some pedals is the noise floor that is not very low.
