So it occurs to me that there isn't alot of creativity in the catering scene for our lovely festivals. alot of hummus or bbq or simple stuff like that.

i'm interested in creating foods that lend to the psychedelic experience. food with strong flavors, lots of character.
thing about having a head full of whatever and thinking "holy crap, this food is amazing! this is the best part of my experience!!!"

what would you like to see in our foods?
for instance: i'm starting small by doing one festival this summer. we'll be offering vietnamese style sandwiches (pickled carrot slaw, roasted garlic aioli, paprika marinaded beef on a nice crunchy baguette) for lunch and dinner, and in the morning i think we'll be offering chive cream cheese and country ham bagels or almond butter and orange or raspberry jam.

humble, simple foods with tons of personality and flavor for reasonable prices.
thoughts? food experiences to share? stories of that best food ever!?

And if you do not like the limited choice in food then what?

I would say diversity in food is the key to a successful catering because people are different with different taste buds. Just a they have different taste in music

oh, i completely agree! i'm not trying to pigeon hole anyone or anything, i'm just trying to see what ya'll think.
i mean, my idea is to create new and interesting culinary experiences on an outdoor food stall level. but do it in a fun and interesting way that people can enjoy and experiment with, while not spending to much money.

One of my best festival-food-experiences was AFTER one of the German festivals with purely vegetarian offerings.

The vegi stone-oven pizzas are of course a real treat, but won't get you through an entire week. So after the festival we drove straight towards the first fast-food place and of course there was a McDonald's close by (seems like there's a McDonald's in ~20 km range wherever you go). I'm usually not a big fan of McDonald's, but that BigMac was like sent from heaven.

i mean, would you rather some premade frozen burger on a nasty fucking enriched white wheat bun, or a nice mango pulled pork empanada? or some tysons chicken tender just tossed in bullseye bbq sauce or a lime and ginger marinaded chicken satay with peanut sauce?

hell i dunno. i guess i pay attention to food no matter where i go?

profane: yeah man, i started out wanting to do all vegan, cause i thought it just made since for psytrancers to not be meat eaters and have as little environmental impact as possible.

but then i met some psytrancers :/

Anyways; I'd pay A LOT for some tiramisu in the morning. Of course the real deal with mascarpone, lady-fingers and lots of good liquor

oooohhh nice one. i guess decadent would lend nicely to the psy vibe in a way. it could be tempered with healthy as well, done properly.

and caffeine or mild body sensations also play into it.

what about some pork with rice . my favorite at boomfestival.
Just some advice, if you doin some pure mdma keep away from the thai food with peanuts I almost set my tent on fire with my farts..extremely deadly combo!! no joke!!

Hire some local skilled chefs and make a diverse Kitchen based on food from around the World. That would do the trick for me. And remember one thing. Keep the hygiene top level A+. Too many get sick from bad hygiene at parties and Festivals. Make sure those handling the food are educated in Kitchen hygiene and how to preserve food.

i'm servsafe certified and have been working as a chef for 10 years. went to johnson and wales charlotte campus, and am currently the sous chef at one of the best taprooms in north carolina. before that i spent about 3 years learning the ins and outs of vegetarian/vegan/raw/live/gluten free/soy free cooking and am attending natural chef certification classes at cccc in pittsboro.

and i'm doin it all for yous!!

but yes, mr.sir. cleanliness is a serious concern and a constant challenge. i'm actually designing the food to work in an outdoor environment. that was one of the telling points for the vegan food. you cut your food born illness factor in half by taking meat off the menu.

mica: tell me more about this pork and rice, if you don't mind. was it just a plate of pork and rice? or were their more to it? did they make the rice fresh? did they use stock? any veggies? how much was it for what portion size?

honestly, something simple like that would be very easy and nice to do.
maybe have some chili oil and dry thai spcies or something.           Doof Local

Quality fresh salad, spiced rice & hand made falafals always made my trips amazing & I'm a massive meat fan. I avoided meat always at music festivals of any style as I do not trust the refrigeration. I've ended up with bad stomach to many times, one time with no toilets to use & well yeah brown pants into the fire!

Now-a-days I usually just for for the main night so eat heartily before I go, take some home made muesli bars & water & fruit in a refrigerator bag & eat heartily when I'm home & I know food hygiene and quality is safe.

I got real sick with food poisoning at Outback Eclipse Festival in Australia around 2002 & lost 25kg in 3 days in hospital as a result.           I hate you, you hate me, we are all so hap hap happy!

here i've seen At least a fuckin Hot Dog Stand, and Hamburger stuff...i dunno, not my "type of meal" in a Psychedelic Experience,i would like somethin more Exotic AND Healthy... so, what u have mate it's a Great Idea!!!!
