hmm

never tried UT2003 but I used the sound of the flak cannon from UT in my track "dangerous dinosaurs" ... it was easy peasy... just opened up the UnrealEd editor program, then opened the "Sound Browser" and it gave me lovely options to export any sound as a .wav file           http://www.dartrecordings.co.uk/

unreal tournament should be easy: browse sound archives, and copy the sound files you want.

i recommend you to use total commander for browsnig game archives [it supports all the zipping formats], and inside the files are in ogg vorbis format.

boom.
