I thoroughly enjoy stuff produced by Neptunes, Timbaland, BT, Mirwais and William Orbit to name a few. Pop or not, there's lots to learn from their sound and composition.

Gorrilaz - both their albums are awesome!!!
Whoever is doin Gwen Stefanis beats is also very good, all her tracks sound really fresh.
Bjork for sure!!! Beyonce also has a few really well produced tracks
