Mp3s are perceived less loud than wav files, that is why so many kids nowadays have hearing problems, Tinnitus etc. ! The difference is perceived, not real, hence the volume gets cranked up, the ear gets fucked up etc.

Now you can say that you did some kind of mp3 vs wav test, my answer is that unless you have a huge sound system, you will not notice a difference, just like estimating speed it is not necessarily easy to perceive that difference in spl,

Too amny pages to read, but the best DAW, is ofcourse the one its best for you to work with
