I think we would start off with written tutorials and then expand to video. Video is really amazing for learning things quickly, however, as a you mentioned they will need a lot more commitment than writing, and yes... they will need editing.
If you are keen to do a video tutorial then by all means go wild, even ape.

Excellent! Hopefully with some help we can get this website up-and-running asap.
As I have mentioned before, if you are keen and willing to write a tut don't be scared get involved.
I'm still struggling to find people to write tutorials, without them there will be no website.
