i've been making my own hummus for a while, and am starting to experiment with different flavours.

what are your recommendations? do you like it plain, with roasted peppers, with cumin, coriander, etc. etc... and how do you go about adding flavours? i have tried (for example) lightly roasting cumin seeds then adding at the tahini stage... but i am new to flavoured hummus, so any input much appreciated!

please help! thanks!

well since uts very israeli thing i will translate some tips from he best site - humus101


2 cups of smallest humus grains
1 cup thini
fresh lemon juice from 2 lemons
1-2 garlic piece (tooth?? in hebrew we call it garlic tooth)
half spoon cumin
2.5 spoons of bake soda
salt
for serve:
olive oil
parsley

1. make sure you use only the best ones , if it looks too small or damaged then take it out.

2.wash it gooood until the water stay slear

3.put it in water 2-3 liter (add bake soda - 2 tea spoons) for several hours (if its hot outside out it in the fridge)

4.cook in water with no salt , add 1/2 spoon of bake soda. about hour and half.. remove the foam and pills , in the middle of cooking take the grains out wash with cold water and put back in the pot

5.once you can squash them easy with your fingers its ready , dont throu the cooking water

6.remove all the pills

7.grind in food processor , if its too thick then add abit from cooking water

8.let it cool for couple of minutes , add raw thini salt and lemon , possible to add 'lemon-salt' for extra sour

9.let it cool and eat

few notes

humus tend to get more thick after you finish so you can make it tiny more watery then you want it to be

now is time to add some thini (mix) and some cumin and garlic according to taste

and for christ sake get a good PITA for that i dont know how possible in US but you should defintly work on coming to israel if you are humus fan (or falafel)

thanks very much for the tips everyone!

yesterday i made my third batch... this time i added roasted red pepper & lightly roasted cumin, just enough of each to give a hint of flavour (and a beautiful colour from the peppers!)

i like my humus quite coarse, but even so i have been suprised at how much it thickens up after it's done...

next time i am going to try with onions (thanks Tomos!)

hehehe... well i live in North London, so we have wonderful lebanese bread, fresh israeli pita, etc. etc. it's a very southern european / mediterranean / jewish part of the world!
